 Post subject: Chocolate Chip Cookies

1 cup margarine or butter
¾ cup packed brown sugar
¾ cup granulated sugar
2 eggs
1 teaspoon vanilla
2 ¼ cup flour
1 teaspoon baking soda
½ teaspoon salt
2 cups chocolate chips (semi-sweet)

Cream margarine, brown sugar, granulated sugar, eggs and vanilla until light and fluffy.
Combine flour, baking soda, salt and add to creamed mixture.
Stir in chocolate chips.
Drop by teaspoon onto ungreased cookie sheets.
Bake at 375 F for 8-10 minutes or until light brown.
Makes 6 dozen 2 ½ inch cookies.

I haven't tried these since I just found them, but thought I'd post them since they're egg free as well.

Always Delicious Choc Chip Cookies,
(Whats to Eat?, Coss)

1c safe margarine, room temp
1c sugar
1c brown sugar, packed
1tsp vanilla extract
3 TBSP oil, 3 TSBP water, 1 tsp baking powder, mixed together
2 c flour
1 tsp baking powder
1tsp salt
2c safe chocolate chips

Preheat oven to 375

Cream margarine, sugars and vanilla. Add oil-water-baking powder mixture, mix well. Mix in remaining dry ingredients until well blended. Stir in choc chips.

Form dough into 1in balls and place on cookie sheet. Bake ~10min until golden brown.

For those of you that enjoy mint and chocolate together, this cookie recipe is yummy! Because of the mint, it's a good cookie to make around the holidays as well.

Mint Chocolate Chip Cookies

1 cup butter or margarine softened
1 cup granulated sugar
3/4 cup packed brown sugar
2 teaspoons vanilla extract
1/2 teaspoon salt
2 eggs
2 cups all purpose flour
1/2 cup cocoa
1 teaspoon baking soda
1 2/3 cups mint chocolate chips (one 300 g bag of Hershey's semi-sweet mint chocolate chips)

1. Heat oven to 375 degrees F
2. Beat butter, granulated sugar, brown sugar, vanilla and salt in a large bowl until creamy.
3. Add eggs; beat well.
4. Stir together flour, cocoa and baking soda.
5. Gradually add flour mixture to butter mixture beating until well blended.
6. Add chocolate chips to batter.
7. Drop by rounded teaspoons onto an ungreased cookie sheet. (I use parchment paper)
8. Bake 8 to 10 minutes or until set. Cool slightly; remove from cookie sheet to wire rack.
9. Cool completely.
