I just thought I'd share this recipe. We've made it twice now and have really enjoyed it both times - but I thought it was great since it has a Tofu version too. We've only ever had the pork version.

Grilled Lemon Thyme Pork Tenderloin (for Tofu veriation see below)

2TBSP chopped fresh thyme (I used dried)
2TBSP vegetable oil
3 cloves garlic, minced
1tsp grated lemon rind (I usuall use lime since that's what I usually have on hand)
1TBSP lemon juice
1/2tsp each salt & pepper
2 Pork Tenderloins (about 1 1/2lb total)

1. In a large bowl, whisk together thyme, oil, garlic, lemon rind & juice, salt & pepper; add pork, turning to coat. Cover & refridgerate for 1hr or for up to 24hrs

2. Place pork on a greased grill over medium-high heat; close lid and grill, turning once, until just a hint of pink remains inside & juices run clear when pork is pierced, 16-20minutes.

3. Transfer to a cutting board; tent with foil and let stnd for 10min. Slice diagonal.

Grilled Lemon Thyme Tofu:
Replace pork with 1lb firm tofu. Cut into 1/2" thick slices; reduce grilling time to 12min.

4ye old DD allergic to sesame, peanut, raw egg , and mulitple environmental & seasonal allergies

2 yr old DS -no known allergies!
