I made this recipe over Christmas, and it tastes EXACTLY like the real thing! I've not been able to locate a nut-free caramel corn, and decided to test this one out. It was SO good (almost too good - my husband, kids & I polished off the whole batch - next time I think I will try freezing half the batch!)

1/2 cup of popping corn
1 cup brown sugar
1/4 cup corn syrup
1/2 cup butter (those with dairy allergies could try a substitute)
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 teaspoon vanilla

Pop the popcorn (I used an air popper) into a large bowl. Melt butter, then add brown sugar, corn syrup and salt. Stir constantly. When at softball stage (or double its size), turn heat to low for about 5 more minutes. Continue to stir ocassionally so it does not burn. Remove pot from heat, then stir in baking soda and vanilla. Quickly pour mixture over the popcorn and stir until popcorn is well covered. Cook in centre of oven at 250F for 1 hour, stirring every 15 minutes. Cool and break apart. Delicious!
