A few years ago, I was recommended a allergy specialist to find why I get reactions to fruits and pollen. He ran some tests, found out I was allergic to cats, dogs, peanuts, all tree nuts. He said that he didn't know why I was getting allergies from fruits and had to test each one specifically, which he didn't have the tools for, so I just for 2 puffers for reducing the reaction. A year ago I found out that I had OAS. So my question is:
1. Should I talk to a nutritionist about this?
2. I have mental health issues, should I manage that first or my OAS?

I'm not sure I can specifically help, but our son also has OAS. He is now 13, has multiple food allergies, seasonal allergies, and allergy to some animals. The OAS developed about 5 years ago (or so) and is related to seasonal allergies, specifically pollen allergy. Apparently he can eat the cooked version of these fruits, but not the raw.
For OAS, specific fruits (or vegetables) can vary from person to person. For our son, he cannot eat raw (fresh) versions of:
apples, pears, cherries, peaches and plums. He also cannot eat fresh pineapple or watermelon. In addition, he cannot eat raw or cooked peas or carrots.
For all of these OAS fruits/vegetable, he completely avoids eating any of them.
He still eats many other fruits and vegetables (raw or cooked): oranges, grapefruit, raspberries, strawberries, blueberries, black berries, banana, cantelope, honeydew, grapes, broccoli, zuchinni, lettuce, tomato, peppers, cauliflower, potato, cabbage, corn.

It's important to determine which foods you need to avoid in order to function well. You can set up a food diary and record what you eat and any symptoms. This will help pinpoint which foods you are reacting to. There are several templates and apps available but this one is fairly straight forward.

As well, your allergist can test you for tree and grass pollens. You will most likely have reactions to fruits and vegetables that are related to these allergens.
Should I speak with a nutritionist?
The Dieticians of Canada have toll free numbers that you can call in most areas to speak with a registered dietician. Again, the food diary will help you to determine if there are any nutritional deficiencies.

I have mental health issues, should I manage that first or my OAS?
It is important to manage your mental health first in order that you can cope with the challenges of a restricted diet. At the same time, being symptom free will help you to sleep better which can go a long way in helping with mental health. Ultimately, the goal is to be as healthy as possibly both physically and mentally.
Speak with you Allergist and mental health care professional to make sure that any medications you might be taking do not cause issues with the other condition.
Living with food restrictions can certainly be a challenge. There are allergy support groups in most communities. Maybe your allergist can help you find one.
