I agree with this article. I'm a celiac, and I rarely use substitute flours. I focus on eating brown rice and rice noodles in order to get my carbs. It was very difficult for me to change my diet, but once I did, I was surprised by how much better I felt. I actually didn't need to eat sandwiches and waffles. It's interesting for me to see how changing my diet changed my life. It was very liberating to me to discover that I didn't miss the food that I had such a difficult time giving up.

I was one of the people obsessed with finding a GF flour substitute. But then I realized that we rarely eat that way anyway and I can always buy gf baked goods and mixes if I need something. The thing I like about this article is that she mentions substitutes for the things you are missing when you aren't eating gluten (eg, b vitamins).

Me - Allergic to Dogs, Cats, Dairy, Nickle.
DH - Celiac Disease
DS1 - Allergic to Horses, Cats, Dogs - Asthma, Eczema
DS2 - Allergic to Cats - Eczema, Asthma
