 Post subject: Banana Cake/Loaf/Bread

This recipe is a seriously yummy Banana Cake - not just good for celiac good - but really good! The texture is awesome - which is usually a challenge for gluten free cakes.

1 1/2 cups white rice flour
1/2 cup Quinoa flour (or you can use 2 cups rice flour if you don't have Quinoa)
3 tsp baking powder
1/2 tsp salt
1 tsp Xantham Gum (can be omitted but I think it helps the texture)
1 cup plus 2 tbsp soft butter
1 1/4 cups white sugar
4 mashed really ripe bananas (I use frozen ones that have been thawed)
4 large eggs

Preheat oven to 350
Mix flours with baking powder and salt and xantham gum in bag (to keep the dust down)
Cream the butter & sugar. Add bananas until smooth and beat in the eggs.

Stir this into the flour mixture until blended. Do not overmix.

Pour into a bundt pan or large loaf pan and bake for about 1 - 1 1/4 hours or until a skewer comes out clean and the cake is just firm.

Cool for 10 minutes and then turn out.

Topping. You can add a lemon glaze (Mix 1Tbsp lemon Juice and 4 Tbsp Icing sugar to create glaze) and brush on warm cake. Then drizzle more lemon juice/icing sugar icing when it has cooled.

Icing. Cream Cheese Icing & wanuts are always a nice topper for Banana Cake.
