Post subject:  Post-Passover, a good time to stock up!

Passover is ending tomorrow, so you might be able to find some good stuff on clearance if you live near a Jewish area. Corn is forbidden during the holiday to those who follow Ashkenazic guidelines, so many items are available in modified versions which maybe safe for those with corn allergies. For example: marshmallows, pudding mix, hot chocolate mix made with tapioca starch instead of corn starch. I have a bit tub of potato satrch in my pantry, and will be experimenting to see if I can make my own pudding mix :)

Can you substitute potato starch for corn starch in pudding recipes without altering taste? If you're interested, I have simple home made pudding recipes that you can try subbing in the safe starch...(not sure about your other food allergies / sensitivities).
