Cranberry Yogurt Muffins
I adore these muffins. They are my most favourite in whole world.
Obviously it's not dairy free. I have never tried this with soy yogurt, but I don't know why you couldn't. I have been thinking of trying this with Tofutti Sour Supreme -- the soy sour cream -- as well.
1 cup rolled oats
1 cup plain yogurt
½ cup vegetable oil
¾ cup brown sugar
1 egg (or egg replacer)
1 cup all-purpose flour
1 tsp salt
½ tsp baking soda
1 tsp baking powder
1 cup cranberries (or blueberries)
1. Preheat oven to 400 F.
2. Soak oats in yogurt.
3. Add oil, sugar, and egg. Beat well.
4. Sift in flour, salt, soda, baking powder.
5. Before stirring, sprinkle cranberries over flour mixture.
6. Stir to blend.
7. Fill muffin cups.
8. Bake for 20 minutes or less.
Makes 12 - 14 muffins.

Thanks Karen! I love when people post recipes, as I love to cook. This one sounds great. Now someday, I just have to organize my overflowing pile of clipped recipes into binders!!
