Hi all.

This one I got from the cookbook "Freedom From Allergies - 4th Edition".

Keep in mind all recipes I post are all Nut Free, Food Additive and Preservative Free, Dairy Free and anything else worth mentioning I will since I'm allergic to so many food items I really have to watch what I eat, usually making meals from scratch.

This recipe is great for people who cannot have cheese and tastes just as good, if not better than regular mac n' cheese.

1 ½ cup of macaroni half a can of tomato paste
6 cups of boiling water ½ an onion, finely chopped (Spanish Onion is best)
1 large can of plum tomatoes ½ green or red pepper, finely chop
½ tsp of cayenne (or more to taste)

Strain the tomatoes then blend or use food processor.

After finely chopping onion and green pepper sauté them for 15 minutes. I use Cold Pressed Olive Oil

Add sautéed veggies to blender and add the cayenne pepper, tomato paste and a dash of kosher salt, then blend until smooth.

Bring sauce to a boil and simmer for about 10 minutes.

As you wait for sauce, cook your macaroni. I find it usually takes 8 minutes to cook. Stir pasta often.

Serves Two

If you can consume dairy one thing I like to add to cool the spiciness down is adding a small amount of a good quality plain yogurt on top as a garnish. It also adds protein to your meal.
