Post subject:  Looking for egg free dairy free rootbeer cookie recipe

I have just recently started baking because allergy friendly goodies are crazy expensive. So far I've been using the Food Allergy Mama cookbook, which I love, but I am craving rootbeer cookies. I don't feel confident enough in my baking abilities to try to adapt an existing recipe (I didn't bake at all until my daughter was diagnosed) so I'm hoping someone has an egg free dairy free recipe for rootbeer cookies they'd be willing to share. Thanks!!

I have never heard of root beer cookies. I think I might have to look them up and try them. You have peaked my curiosity. :lol:

Here's a recipe, don't know if it's any good.

To make it egg and dairy free, simply substitute a safe margarine (or shortening) for the butter, soy milk or another milk alternative for the milk and the egg subsitute I like is:
1 egg = 1 tsp baking powder + 1 1/2 tbsp oil + 1 1/2 tbsp water
double for 2 eggs, triple for 3.

You're suppose to mix it together and use as an egg but I add the baking powder to the dry ingredients and the oil & water with the wet ingredients.

Thanks! I'll try the substitutions and see how I make out (fingers crossed). If you like rootbeer floats, you'll love the cookies. I used to get them from our local Farmer's Market until we found out about our daughter's allergies (we're still breastfeeding so eating them when she is not around isn't an option.) I can't wait to try a safe version of them!

These sound awesome, and I can't wait to try this recipe. Does anyone know where to find root beer extract? I've never seen it, although I assume stores that carry it, would put it near vanilla etc.

The Bulk Barn carries many flavours. I don't let dd go in the store, but I do buy some things there (bottled or prepakaged items).

I picked up Lorann Gourmet rootbeer flavour at the Bulk Barn. However, I noticed this company also makes nut flavours. I contacted the company to find out about the possibility of cross-contamination etc. I got a very prompt reply saying that their nut flavours are actually artificial. She also offered to send me an allergen report on any product I would like, so I did ask for one. Very good customer service!

After many months of searching, I FINALLY found root beer extract - from our local Watkins rep, of all places!!! I'm going to try and make cookies this afternoon, using this recipe, with Vegan Becel instead of Earth Balance, since I live in rural Alberta and don't have easy access to Earth Balance.
