I'm the baker in the house and my wife has a bunch of allergies that keep me from using commercial flours or rolling my own based on recipes I found on the net -- she's allergic to a number of the standard ingredients. Specifically, she's allergic to:

• wheat
• sorghum
• tapioca
• corn
• soy

Tapioca and/or sorghum are standard in the recipes I've found so far, all of which were also gluten-free (she's not allergic to gluten). Does anyone have an all-purpose flour recipe that avoids the specific grains she's allergic to?

Hi Caspergrin,

I'm not sure of cross reactivity of other grains and starches, but you could try amaranth, quinoa or brown rice flour instead of sorghum, potato starch or arrowroot instead of corn or tapioca starch. There are also flours that are made from beans.

Shelley Case has a wonderful book called the Gluten Free Diet that is our GF bible with a lot of different substitutions and information on gluten free flours and starches.

You say she can have gluten, but what about flours that are similar to wheat (rye, barley, kamut, spelt) and derivitives of wheat (triticale, etc)? These are other options for flour and may be able to be substituted directly for wheat flour.

It will be a steep learning curve, but I hope you find a flour that will work for you!

DS1 - Allergic to Horses, Cats, Dogs - Asthma, Eczema
DS2 - Allergic to Cats - Eczema, Asthma
