Post subject:  Awesome recipe for PN and TN free granola bars

This is my modification of the recipe found in the Kingma cook book. The book is for egg and milk free diets, but it also excludes nuts in most of its recipes.
I made these today and they are wonderful, chewy and crunchy!

Tree-hugging Granola Bars

½ cup flour
½ cup whole wheat flour
1 tsp. cornstarch
1 tsp. cinnamon
1 tsp. baking powder
½ cup butter (can use dairy-free margarine if milk allergy)
2/3 cup packed brown sugar
2 Tbl. sugar
1/3 cup honey
1 tsp. vanilla
1 1/4 cup oats
¼ cup wheat germ
¼ cup flax seeds (I used them whole, not ground)
1 cup rice krispy cereal
1 cup raisins
1 cup dried cranberries
(I used less raisins and cranberries and added ½ cup choco chips, also)
Recipe calls for small handful of mini-marshmallows, but I didn’t use them.

Preheat oven to 350F. Grease a 9x13 in cake pan.

Whisk together the flours, cornstarch, cinnamon, and baking powder. Set aside.

In a large glass bowl, melt the butter in the microwave. Add sugars and beat until fluffy. Blend in honey and vanilla.

Add dry ingredients to the wet ingredients and mix well. Fold in the oats, wheat germ, flax seeds, rice krispies, raisins, cranberries, and choco chips, if used. I find that using clean, damp hands work best for this job!

Pat dough into prepared pan. Sprinkle marshmallows over the top if using them.

Bake for 20-25 min until golden brown. Cool COMPLETELY and then cut into bars. Store in airtight containers or ziplock bags.

Dd found these to be too sweet so we cut out the white sugar and used corn syrup instead of honey. We also omitted the dried cranberries and increased the crispy rice cereal to 2 cups.

They were a big hit at the cottage with all of the kids!

I just tried these Susan and they are great. Even our picky little man loves them...of course that is because they have Rice Crispies in them and Rice Crispies are the staple of his diet :D
I used your recipe modifications and they were perfect. I added 1/2 cup raisins and 1/2 cup cranberries, but the cranberries I cut in 1/2 with scissors as I find if the lumps are too big our son spits them out. I think their flavor is stronger than raisins so although he doesn't mind raisins whole the cranberries taste is too strong if the pieces are too large. Cutting them takes a little time but worth it if he will actually eat something!! ( I've used the mini food processor before but it turns them into goop.) The only thing I'd do differently is to add ground flax seeds next time instead of whole. There seem to be more on the plate afterwards than in his tummy.

My daughter doesn't like raisins but I find if I use the golden ones she doesn't notice them!

yes, I was happy to find this recipe. If I can keep the shelled sunflower seeds in the house long enough I might add these.

Also, I'm going to dehydrate apple this fall. I can't make them fast enough for my husband and daughter. I'll try these in the recipe as well.

Do you use a dehydrator or the oven for apples? I've looked (causally) for a dehydrator but haven't seen one.

I used to find the shelled Spitz sunflower seeds at Zellers but lately I can't find them. Where do you buy yours?

My family is just happy when I try something new which is good but they are even happier when I actually follow a recipe. Usually baked goods in the freezer they stay away from as I'm known to make 'boy' concoctions. :D Tupperware may contain anything from pureed veggies mixed with ice cream or 'boy special's as we call them. Boy specials are any type of cookie/muffin in which I have put any variety of veggie, or even pureed chicken. My goal is to boost him from the 4th to the 40th percentile :D

Thanks again for the recipe. I can't believe he is actually eating them. Probably because they actually have the butter, sugar and corn syrup in them :D

My mother gave me a dehydrator years ago and it mainly collects dust. I have made dried apples in it a few time but not for any real purpose and they eat them up so quickly that I never had enough to make anything out of them so I never got in the habit...

I spent an hour the other day freezing broccoli (at $0.69 per bunch as opposed to $2.69 in the deep of winter) and I suppose I'm getting into food storing mode.

Canning intimidates me with the boiling and sterilizing, drying I can handle. :)

I made these and added spitz sunflower seeds and substituted currants, diced dried apricots (I used a mini chopped) and white chocolate chips. :D
