I was curious what some of your favorite food and/or recipes are for Christmas dinner? :popcorn :banana

For dinner, my favorite is Stuffed Red Bell Peppers (soy free), and Tofu Burger. The Red Bell Peppers just look so festive with their little crowns. I'm making both of these this Christmas so my family have a taste of what I eat.

Stuffed Red Bell Peppers:
Free of: DF, EF, FF, SFF, SWF, PF, TNF, CF, GF, SF.

4 - 6 Red Bell Peppers, deseeded, white bits cut out, and only top cut off. (1 per person)
2 cups Spinach, frozen,
2 cups Fresh Mushrooms, chopped
2 - 15 oz. can Garbanzo Beans
2 - 3 Roma Tomatoes, sliced
2 - 3 Yellow Bell Peppers, sliced lengthwise (1/2 a Pepper per Red Bell Pepper)
Parsley sprigs, for garnishing

The Sauce:
2- 15 oz. cans GF Tomato Sauce without spice
1/2 Cup Olive Oil
1/2 Cup Fresh Italian Parsley, chopped
2 TB Sweet Basil
1/8 TSP Cayenne Pepper, or to taste
1 tsp Thyme
2 tsp Marjoram
2 tsp Cilantro
1 tsp Cumin
1 tsp Nutmeg
Kosher Sea Salt, to taste
Black Pepper

1. In a medium sauce pan, add the Tomato Sauce and all the Sauce ingredients. Mix well.
2. Bring to a boil. Cover and simmer for 30 minutes.
3. Cook the Spinach according to package instructions,
4. Add the Mushrooms, and Garbanzo Beans to the Spinach, half-way thru the Spinach's cooking time.
5. When the Spinach is done, drain the liquid well INTO the Sauce!
6. In a large casserole dish, put about a ladle full of sauce on the bottom.
7. Place the Bell Peppers in the Casserole dish.
8. Stuff the Peppers with the Spinach, Bean and Vegetables mixture.
9. Pour the Sauce over the Bell Peppers. Put any extra Spinach mixture in with the sauce.
10. Stick 1/2 of a Yellow Bell Pepper's slices into each of the Red Bell Peppers to form a crown.
11. The Yellow Bell Peppers should stick up, with the skins facing inwards.
12. Place 2 - 3 Roma Tomato slices inside each "crown".
13. Cover the Casserole dish.
14. Bake in Oven at 350 degrees, until everything is piping hot, about 20 - 25 minutes.
15. Serve in soup plates, with some of the sauce ladled into each bowl.
16. Top each Bell pepper with a small sprig of Parsley.

Tofu Burger:
Free of: DF, EF, FF, SFF, PF, TNF, GF, CF
Contains Soy, Flax Seeds! (If not Corn free, may substitute Ener-G Egg replacer for the Flax Seeds).

* Tofu 1 pkg., drained well
* 1/2 tsp. Allspice
* 1/2 tsp. Cumin
* 2 TB Sweet Basil
* 2 tsp. Coriander
* 1/2 tsp. Cloves
* 1/2 tsp. Chili Powder
* 3 tsp. Bragg's Amino Acids ®
* 1 TB ground Flax Seed in 3 TB warm water. Whisk.
* Tellicherry Black Pepper, fresh grounded, to taste
* Kosher Sea Salt, to taste
* Olive Oil for frying

How to Make:

1. Drain the Tofu well and break up into little pieces in to a medium sized bowl.
2. Add all the spices, and the Flax Seed paste.
3. Mix very well, breaking up the tofu into a fine grain.
4. Form into patties by pressing them very well to squeeze the tofu together.
5. Fry in Olive Oil set to Medium - High heat.
