These yummy scones are highly adaptable and so easy! The recipe doubles well, freezes very well, and you can add things you like (we always add vanilla and sometimes cinnamon).

1 3/4 cups flour
1 Tbsp baking powder
2 Tbsp sugar
1/4 tsp salt
1/4 oil
2/3 cup skim milk (rice milk worked just fine, so soy would likely be fine, too)
1/2 cup raisins or currants (optional)

Combine flour, baking powder, salt and sugar in a medium sized mixing bowl. Mix thoroughly. Add the raisins. Make a well in the flour mixture. Add the milk and oil all at once, and stir until moistened. Line a baking sheet with parchment paper or spray with nonstick spray (I always just lightly lard the pan). Pat down on baking sheet until 3/4 inch (2 cm) circle. With knife, score dough into 9 wedges. Bake at 450F for 8-10 minutes.
Usually we've had them for breakfast, this past summer I made the recipe with white flour only (usually I use ww flour and white), added vanilla, and then served them for dessert with fresh berries on top. We drizzled some real maple syrup over both, and it was SO good!
