Hi everyone,

I came across this recipe and it makes 6 wonderful whole wheat eggless, sugarless muffins! It doubles well if you'd like to make 12 instead.

2 cups whole wheat flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/2 cup canola oil
1/2 cup pure maple syrup
1 cup water

Mix all dry ingredients in large bowl. Next combine wet ingredients in a bowl then mix well with dry ingredients. Pour into prepared muffin pans and bake at 375 for 20 to 25 minutes.

*I've also made these raspberry muffins and carrot muffins. All I did was stir up some thawed frozen raspberries, or food process a handful of organic carrots, and then reduce the water amount slightly - this is a very forgiving recipe.

Thanks lin101. I'm always looking for basic muffin recipes. My guys are very picky but you never know... this might be the recipe they like!! I'll let you know how it goes when I get a chance to try the recipe.
