This recipie for chocolate cake is on the outside of the package for Pete's Tofu 2 Go Very Berry flavoured dessert tofu.

It satisfiy our needs for dairy, egg, seed, peanut free!

Chocolate Berry Cake
2 trays (300g) Pete's Very Berry Desset Tofy
1/3 Cup fruit juice or water
1/2 cup soft margaine or butter (I used a dairy-free margarine)
1/2 cup brown sugar
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1/3 cup dark cocoa powder
1 tbsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 cup chocolate chips (I use dairy free chips or vegan carob chips)

1) Grease one 9" pan
2) Preheat oven to 350F
3) Puree Pete's Tofy and fruit juice in food processor
4) In a medium bowl cream butter and sugar together.
5) Add vanilla and pureed tofu. Set aside. (obtw don't worry what it looks like, it comes together eventually)
6) In another medium bowl, sift together the reamaining ingredients, except for the chocolate chips
7) pour tofu mixture into the flour mixture and stir until blemded. Do not over mix. (looks better eh?)
8) Gently stir chocolate chips into cake mix
9) pour mixture into greased pan.
10) Bake for 30-35 minutes or until toothpick comes out clean when inserted in cake
11) Cook cake in pan
