I'm going to be making saskmommy's pumpkin pie this weekend. It sounds yummy and DD has said she wants pumpkin pie for dessert this year.

But I think I'll use the coconut milk instead of nutriwhip. Has anyone tried it with coconut milk?

I think it should be fine. You might want to make a filling test first to see if you need to add some cornstarch. It would be a shame if it didn't work. I use this recipe every year but with Nutriwhip.

Susan, we will be having this for thanksgiving this weekend. It is awesome!


I used this recipe for our pumpkin pie this year. It was delicious. The filling was a little on the soft side but it was very tasty. DH who loves pumpkin pie said that it was a make again recipe so that was a huge compliment. I ended up using the Nutriwhip like everyone else has and it worked great.

When I made it last year...I had never made any pumkin pie before, not even the real eggy milky one. It never really ocurred to me that it might be too thin or not set. I guess lucky for me it worked fine.


Not sure why but I'm having a block about this recipe. When you use the 1 tbsp. oil/ 1 tbsp. water/ 1 tsp baking powder, is that for one egg replacement? Do you triple it? I made this last year but can't remember what I did for the life of me!

I modified this recipe slightly. My DD can't eat tofu and I found most vegan pumpkin pie recipes use tofu / soy of some sort. This one is a coconut milk base, and uses arrowroot flour to bind. http://ohsheglows.com/2013/11/07/vegan- ... ker-crust/ I omitted the sugar and used a bit more maple syrup, used rice milk instead of almond, and omitted nutmeg and cloves (just because I don't like either so I don't have any in the house). I made into a pie with Keebler graham cracker crust, so not gluten free. Very yummy.
